Roast Garlic and Zucchini Soup
(Nourish, by Holly Davis)
10 cloves garlic, unpeeled
3 large zucchini, sliced
3 tbsp olive oil
1/2 tsp sea salt
2 medium onions, roughly chopped
1/2 leek, sliced
400g potatoes, chopped
4 cups stock
2tbsp toasted walnuts
2tbsp umeboshi vinegar
rub the garlic cloves and zucchini with 1tbsp olive oil and a pinch of salt
place them on a baking sheet and roast in a hot oven, 200 degrees, for approx 30 min, being careful not to burn them
heat a large pan and pour in remaining oil
saute the onions and leek until both are soft and well-cooked
stir in potatoes and the rest of the salt
pour in the stock and simmer until potatoes are soft
squeeze the garlic pulp out of the skins, discarding skins
blend garlic pulp and zucchini with walnuts and umeboshi vinegar
add potatoes and stock to blender
continue to blend thoroughly
serve hot with crusty bread.

noooo! Well, OK, yes, there is a bit of that. It’s a macrobiotic book, so the virtue-o-meter is very high. The things that work in it though, are delicious. The double page paeans to baby octopus with green tea noodles is definitely overegged.

The thing is, Dorian, if you’re going to make potentially unpopular ex-Labor politician appointments, you have to match them with potentially unpopular ex-Liberal politician appointments. That way you can claim you’re not “partisan”.
